Puerto Rico
is famous for its coffee. Puerto Rican coffee has been produced since the 17th Century in this tropical island. The quality of Puerto Rican coffee has been recognized by many. In the late 1800's through the 1950's Puerto Rican coffee beans were exported to the Vatican.  Puerto Rican coffee was considered the "official coffee of the Pope". Now, the Puerto Rican coffee industry is trying to regain its popularity by focusing once again in its quality. Specialty coffee producers are growing. Now, many farmers are going back to their coffee producing roots and have started to grow coffee the way it naturally occurs in its native habitat in eastern Africa, under the shade of native trees.

High quality coffee beans produced under the canopy of native shading trees could be jeopardized by poor management after harvesting.  Once the coffee cherries are harvested from the coffee trees, they need to be de-pulped, washed and dried before they can be stored. Coffee beans could be stored as "Parchment" (just like the ones in the above picture) or they could be stored as "Green Beans" ready to be roasted. The difference between parchment and green beans is that the parchment beans have a husk layer covering them. This husk is later taken out and you get the green coffee beans, and this is what coffee roasters use for their blends. Because dry coffee beans (parchment or green) absorb moisture and other elements from the atmosphere, they need to be stored in a chemical free environment. At the same time these dry coffee beans must preserve certain balance of moisture inside them. This chemical free environment and the humidity balance are accomplished by storing these beans in the organic-approved GrainPro bags.
